A great lunchbox snack, these tasty banana honey muffins are healthy and only a little sweet. Add chocolate chips to the mix for an extra little treat!

Ingredients (makes 12 muffins):

2 eggs

3 over-ripe bananas

1 cup yoghurt

1/3 cup honey

1/3 cup olive oil

1/2 cup almond milk

1 cup self raising flour

1/2 cup L.S.A mix

1 cup wholemeal self raising flour

1tsp baking soda

Method banana honey muffins:

Mash banana and add all the wet ingredients. Mix well. Gradually add the sifted flour and the L.S.A mix. Mix slowly and add more milk if needed. Pour into muffin pans (we love re-usable silicone ones!) and bake 175 degrees for 20 minutes.
